I’m pretty much just a cheddar kind of guy.
My newest love is Smoked Gouda. I’ve been making toasted cheese with a slice of tomato. Ummmm Good!!
That’s our favorite too. In the last few months I’ve enjoyed 8 year aged, 15 year aged and recently 18 year aged cheddar.
When it get above 8 years, you have to worry about the bite making your mouth bleed. Just kidding but the bite is awesome when it’s really aged.
My wife recently bought some goat milk cheddar. It’s not really sharp but it has a very unique flavor.
