I'm forced to live in an all electric mobile home and electricity is through the roof.
I'm looking for ideas (don't suggest gas . . .SHE'S afraid) and compare / contrasts

That is operated on gas, not batteries.
“Flexible like gas but no need for the big hood.”
Not as flexible as gas. Users of gas stoves like to lift and move the pan around in the flame.
That doesn’t work with induction heating.
“You should NOT be using aluminum pans, period. Unless you want to be in the memory care unit.”
My mother used them.
I used them as a kid camping.
I used them when I was a poor college student.
I used them in the navy.
My wife uses them.
79 years old and still remembering.

As a former sous chef during my University days in NYC accept no substitutes back of house in two of the best. Food network did specials in both and Bourdain used to drink with us in the alphabet streets, Yeah those places. This is the very best you can get nothing compares.

OK, so ‘induction range’ is not like a shooting range I guess.
OK, as one who needs to free frozen bolts occationally, where and what are these induction things.
I can’t put my bolt on the kitchen stove I think.
induction offers down to the degree precision with high level Vikings and Blue Star induction. You can stop in a second the heat there is no other form of cooking that can do this gas is still running you have to move it induction you just turn it off. The very high end chefs as in Le Bernardin and French Laundry use induction for sauces specificity for this down to the single degree control. The other choice is a French top and it is on continuously with temperature zones that you have to move too. As a chef who worked in NYC I prefer induction over French top.

Let’s see, if you use iron, you get some iron leaching into your food, which is a good thing.
So, what’s the benefit of using aluminum pans? None.
I like my cast iron.
But you argued aluminum will cause you go to crazy. That just does not happen.
I didn’t say crazy. I said memory issues. In responses to “Humbug” comments, i also argued that it’s a risk:reward scenario. Risk is potential brain issues, Reward is getting to use Aluminum to cook (not much of a reward for the risk, right?).
