Incidentally, all here- the Outback “tenderloin” steak quoted in the article, is assuredly NOT tenderloin (aged or otherwise). It is, as any beef rancher/processor seller will tell you— a fake cut of compounded beef.
A trick played by a lot of restaurant chains. Not so much the really upscale chop houses, but Outback and Longhorn.
One would be better off buying the real tenderloin and taking the time to prep it properly.
