It’s apparently the ‘frying’ that causes the damage. Boiled and baked are okay..................probaly the seed oils used in today’s world. LARD would be best...............

If folks rediscover the goodness of lard, then the term “lard ass” may become a compliment.

Boiled and baked are not okay, at least if you want to avoid blood sugar spikes. Of course the seed oils in french fries are absolutely horrible.

Well, the scientists and experts (”food fascists”) have already destroyed the taste of potato chips (tastes like cardboard now) and popcorn butter via their ‘anti-trans fats campaign’. If only they would leave well enough alone and rely on people to use self-control. But noooo... they have to ruin it for everyone. Setting things up for their iron-fisted grip on our short hairs by controlling what everyone “else” is allowed to eat.

Boiled and baked are okay

Rinse potatoes. Microwave for three to five minutes. Slice into halves or quarters. Drizzle EV olive oil, season with season salt. Serve and eat.

If it is the frying that’s bad, the issue is probably carmelization.... buy I’m still hugely doubtful because while Maillard (sp?) reactions aren’t great for cancer, no-one has ever tied them to diabetes.
