All of them use Roma tomatoes - there are no other kind to substitute?
They can be water, fertilizer, and season-intensive. US tomato consumption cannot be met with domestic production. This is especially true outside of the growing season, when the ONLY tomatoes grown domestically are in hothouses. This is what necessitates importing them, mostly from Mexico.

Not that yield the same flavor, texture, color, and overall product of Roma. Every tomato variety has its own characteristics - from a fairly wide taste and color pallet, to a big one when cooking: texture. From heavily-meaty varieties, to the sauce varieties. And each has different growing requirements.
On the other hand, Romas are, in my personal experience, among the easier varieties to grow. But quantity of production can still be a challenge to meet the demand. Romas are likely the most popular variety for cooking.
Yep. Restaurants are so expensive already that a few cents more due to tariffs will make no difference. If the proprietors want to price-gouge and blame it on tariffs, well, I wasn’t likely to eat there anyway.
Whatever it takes to slap Mexico into line is fine with me.

Yeh. When I started price gouging during Covid, I said multiple times the prices will never go back down again. In fact they’ve potentially grown. You can’t even get out of five guys hamburger joint with two meals for less than 50 bucks anymore. We now mostly eat at home. Screw all these price gouging restaurants with their mediocre, bland, lack of effort food, oh and then they want a 30% tip on top of that. Forget it.
And being in Arkansas you know the season lasts longer in the southern part of the state. Along with Ala, Miss, GA, Fla, SoCal, etc.

No. Roma taste like roma, and are better for... well almost everything honestly. Beefsteak tomatoes are terrible.
