Giant miss in logic from the article. The deep fried foods - are NOT cooked in fat - they are cooked in plant oils, very high in LA(Linoleic Acid).
Most of the ‘high fat is bad’ papers blurs the difference.
LA can fuel PPARγ activators which are glitazone mimetics - locking fatty acids in the adipocyte (fat cells)
Our liver produce saturated fats, not the oils found in plant oils or chicken meat grown on corn feed.
There are also a number of farm chemicals that act as glitazone mimetics. Explains the geographical difference in obesity seen in the data.
