I throw mine in the freezer if it’s already opened and I know I’m not going to use it right away. Doesn’t change the texture or taste once thawed out again and .... no mold.
Cut the moldy part off; its shallow store in plastic zip lock bag much bigger that the cheese - keeps well and no mold.
