I’m a coastal urbanite and BBQ is more foreign to me than sushi (the real kind) and ethnic/non-American foods LoL.

I have so far only tried Texas...really want to try the Carolinas’ offerings...and Kansas City apparently?

Don’t miss out on Southern BBQ, meaning Northern Florida/ Georgian BBQ. It’s so darned good! I like all the others, but FL/Ga bbq is superior to the others.

Don’t forget the sides! Collards and Mac n cheese, and if you really want Southern, add in some homemade hush puppies. I make all the sides, and hubby does the BBQ.

My recipes have been handed down through my family. They’re excellent and authentic.

Best Midwest BBQ I ever had was in Marshal, Mo but it burned down. A good friend’s stepson owns the Slaps in KC mentioned in the article.

I used to fly with a guy who was a big BBQ guy. We tried a bunch of different types, I lived in NC twice, NC is really good, KC is also good and saucy, Texas brisket is good.

There is good stuff from all of them.

For the best Carolina chopped pork it’s the Skylight Inn at Ayden, NC. BBQ or Chicken either one. And also nearby is B’s, Bum’s, Sam Jones and down the road is Grady’s. Stubb and Son in Sanford and Wilbers in Goldsboro. Hursey’s in Burlington and Stamey’s in Greensboro. Have at it!

Fast Fact #1. If it ain't pig, it ain't barbecue. Sorry Texans. It may be barbecue STYLE chicken or barbecue STYLE beef. Real barbecue is pig and nothing but.

there are 4 main styles

North Carolina - pulled pork with a vinegar based sauce. They frequently pile the cole slaw on top of the pulled pork sandwich (which I disapprove of).

South Carolina - pulled pork with a mustard based sauce.

Memphis style dry rub ribs. (simply divine if they know what they're doing)

Kansas City style - heavy tomato sauce on ribs

there is also Alabama style white sauce on pulled pork but that's not as common.

There's also Texas style beef brisket....and its close cousin Mesquite brisket. Yummy, but this isn't technically barbecue.

It has long been known that if you want to get Southerners fighting each other instead of outsiders, the two time honored subjects for this are college football and barbecue. :^)

Lived both in Texas and California. When I lived in San Francisco the best ribs were at a place in Cloverdale up in Sonoma county. Easily the best I have ever eaten.
