I tried growing potatoes one year in west-central Arizona. Turned five pounds of seed potatoes into a handful of brown marbles. The vines looked good, though.

Potato Plant pH
Potato plants prefer slightly acidic soil with a pH ranging from 5.0 to 7.0.
Commercial growers typically aim for a pH between 4.8 and 5.4, which is more acidic.
However, potatoes can still grow well in a pH range of 6.0 to 6.5.
A higher pH can lead to increased susceptibility to scab, a potato disease.
If your soil pH is higher than the ideal range, you can lower it by incorporating elemental sulfur or using a soil acidifier.

Wife planted red potatoes in garden - we are Southeast of Phoenix.
came out small but looked good

Wonder if red potatoes are better than others - i enjoy me some red potatoes!
