The battle over the health merits of various cooking fats has never really gotten below a simmer — but it’s starting to heat up again.
Beef tallow and other animal fats, including pig lard and butter, were traditionally used as the main cooking fats in the United States up until the early 20th century. A shift occurred in the early to mid-20th century, when scientists started looking into the consumption of animal fat as the culprit behind the uptick of cardiovascular issues. Vegetable and seed oils that had largely been used for industrial purposes — such as soaps, machinery fuel and candles — started to be widely promoted as heart-healthy alternatives to animal fats.
And indeed, research has shown that plant-based oils, such as olive and canola oil, may be better for certain health outcomes than animal-based fats, like butter

I don’t know; it’s trendy to embrace the use of animal fats, and progressives are all about trendy.
I don’t believe it’s a coincidence that obesity rates in the US exploded around the same time that we made the switch from beef tallow and cane sugar to seed oils and corn syrup.
I’m interested in the answer to this question, but CNN is probably not the right source.

Couldn’t we genetically engineer plants to produce the same fats as animals have?
That way you could keep the cost down but have the advantages of tallow.

You have to get these things from reliable suppliers, though.

theoretically, yes ... but retail animal cooking fats are nearly all partially hydrogenated to keep them shelf-stable and loaded with preservatives to prevent mold ...
periodically, i’ve made my own beef tallow, and even refrigeration wasn’t sufficient to prevent molding for more than a few days: only freezing would prevent opportunistic contamination ...
I just had old-style fries last night, with beef tallow, for the first time in years. They are really good.
Duck fat is my favorite.

As I recall, the only reason that McDonald’s stopped using beef tallow is because an Indian family ate there and did not know that their french fries were made with beef tallow. And, according to Hindu religion, eating beef is forbidden. So, they sued McDonald’s for a whole lot of money. That’s why they stopped using it.
Welcome to the US, Hindus. Don’t like our fries, don’t eat them.
Why would an Indian family eat at McDonalds? Did they think Big Macs were vegetarian?
We have a produce market nearby that sells Crisco-size containers of pure LARD...God Bless them!
