When my gut - and my overall health - was at its worst, I responded badly to processed flour products. Take your pick.

I discovered quickly that Bob’s Red Mill Whole Wheat did not impact me negatively at all. It was a watershed moment I tried to share...to no avail.

Any honest person will concede that the markets have responded to the fad ‘diet’ craze for reasons unrelated to health but rather to profits.

My own wife will gripe about gaining weight and her other health problems while touting her GF products. I can’t even convince her. It’s insanity.

I have been able to tolerate regular processed flour products without negative impact for a number of years due to restored gut health, but do so rarely.

It's probably because Bob's Red Mill use an heirloom wheat.

Did you ever do an elimination diet?

Many people feel better going GF just because their diet is changed. These days GF products seem to have more chemicals and calories than old school GF where you just do without certain food groups.

No particular gut problems but on an elimination diet nowadays tbe behest of a functional medicine doctor. Odd excema/psoriasis outbreak.

No flours. No grains no seed oils No dairy. No sugars.

Selected beef and chix and veggies

Appears to be marginally improving.

Giving it 3 months

I have a celiac family member. Celiac disease can only be diagnosed through a biopsy of the gut. Many people who use gluten free products don't realize that they are loaded with fats and sugars to make them more palatable. A true gluten free diet consists of items you find in the perimeter of the grocery store; meats, veggies and fruits that all need to be refrigerated, hence their perimeter location. Even some meats should be carefully inspected for injections that may contain gluten (chicken and turkey, especially). The USDA allows for some gluten contamination while still being able to carry the Gluten Free badge. Only items certified GF by the Celiac Sprue Association come from sources that are truly gluten free. This issue applies to the US only, as Canada and Europe do not allow any contamination of labeled gluten free foods.

Even celiacs sometimes need to go further in their restrictions to heal the damage done to their gut. The Specific Carbohydrate Diet is very helpful for those who have experienced some success on GF but still don't feel 100% better.

Foods have enough vitamin a, so we don’t need supplements. But many foods, such as skim milk, chocolate milk, fruit juices and multivitamins have retinol supplements. Consuming more retinol (a type of vitamin a) than we need can harm us.
