i have used both, and in my opinion, the main advantage of gas is in heating a large frying pan. it’s almost impossible to get uniform heat in a large pan with an electric stove; however, gas wastes a lot of its heat content in hot combustion products that fly up the sides of the pot making the handles too hot to touch. for example if you’re trying to boil water quickly and turn the gas up all the way about 2/3 of the heat bypasses the pot. I’ve found that an electric “burner” is faster at boiling water.
