My favorite are ‘Whiskey Glazed Carrots’ by The Pioneer Woman. I only make them on a holiday, though. Her running commentary when she makes a recipe always cracks me up!

I have a pot of chicken soup (plus noodles instead of matzo balls) doing a final simmer. I had to get out my big 7 qt. cast iron/ceramic pot - the new 5.5 qt. was too small. Also, if I make this soup again, & I likely will, I will buy a package of organic bone-in chicken thighs instead of using a whole chicken.
I am worn out - maybe I will get a 2nd wind tonight to make the carrot soup I saw in my new monastery soup book. For today, I used one whole chicken for the soup, froze another whole chicken, & picked the meat off 2 rotisserie chickens ($2.02 each - I couldn’t resist). The coyotes & probably the neighbor’s cat will be feasting tonight on the 3 carcasses.
The main snow storm has passed & we are getting spotty showers. Looks like about 2” and I don’t expect more. Some snow showers tomorrow - perfect weather since I have more cooking to do. BTW, I love leeks and they are frequently used in the monastery soup recipes .... but they are SO expensive! Hopefully, the price will come down later this year.
