These spinach/herb tortilla roll-ups are irresistibly healthy
chock full of veggies w/ cream cheese and Cheddar cheese.
Ing 1 c veggies diced/grated---carrots, celery, onion, varied bells, scallions, cukes. 1/2 c shredded Cheddar 4 oz Cr/Cheese 1/4 c Mayo 1 tbl chp parsley and dill s/p pinch Gar/Powder 3 Mission Spinach and Herb Tortillas
Instructions Soften cr/cheese. Finely dice peppers, onions, cucumbers, celery; finely grate carrots. Combine mayo, shredded Cheddar, cr/cheese, veggies, chp herbs. Then spread over tortillas. Roll, tucking tightly as you go. Saran, twisting ends (freezing 30 min makes slicing w/ serrated knife easier. Keep chilled til ready to serve.
