These spinach/herb tortilla roll-ups are irresistibly healthy
chock full of veggies w/ cream cheese and Cheddar cheese.

Ing 1 c veggies diced/grated---carrots, celery, onion, varied bells, scallions, cukes. 1/2 c shredded Cheddar 4 oz Cr/Cheese 1/4 c Mayo 1 tbl chp parsley and dill s/p pinch Gar/Powder 3 Mission Spinach and Herb Tortillas

Instructions Soften cr/cheese. Finely dice peppers, onions, cucumbers, celery; finely grate carrots. Combine mayo, shredded Cheddar, cr/cheese, veggies, chp herbs. Then spread over tortillas. Roll, tucking tightly as you go. Saran, twisting ends (freezing 30 min makes slicing w/ serrated knife easier. Keep chilled til ready to serve.

Those are one of my favorite treats of all times. My Mom makes them and they are the best! Big around here is, 'Wisconsin Sushi.'

"Wisconsin Sushi, also known as pickle roll ups, is made with just three ingredients: dill pickles, deli ham, and cream cheese. Simply spread cream cheese on slices of ham, roll them around the pickles, and slice into bite-sized pieces for a tasty appetizer."
