

Impossible Pie
Became widely known in the 1970s from Bisquick boxes. No one really knows where the name came from, maybe b/c it is “impossibly” easy to make. Or maybe because it seems “impossible” how ing can end up as a three layer pie. Or because it magically makes its own crust......one of the most delicious desserts you'll ever try
Ing 4 eggs ¼ cup butter, melted 1 cup sugar ½ cup flour ¼ tsp salt ½ tsp b/powder 2 c milk 1 cup or more flaked coconut 1 tsp vanilla
Steps beat ing til combined, or blender til mixed. Pour into greased 9 -10 inch pie dish. Bake 360 deg 1 hour til center is firm and pie is golden; will have a slight but will set as it cools. When done, crust will be on bottom, custard in the middle, and coconut on top. Cool then refrigerate overnight. Serve with your favorite ice cream, whipt cream, sprinkled with toasted coconut.
