Why carry a handgun with a safety? Because some idiot cop might shoot you in your leg when pulling it from your holster.

Usually "Glock Leg" is from the owner but in this case it was from a cop.

Inside the waistband is not a very ready, or comfortable position to carry, while driving.
I usually place my device on the center console tray, where it is easy to retrieve, but not uncomfortable.
Also, if asked to exit the vehicle, it is not involved in a pat-down, where an inept public servant might shoot me.

I have a Sig P365 and it comes with an optional safety.

Personally, I wouldn't carry a semi-auto without a safety on it.

I won’t buy nor carry a pistol without a safety. Way too “old school” for that.! If I did, I probably won’t have any toes left on my right foot.
“Cocked and locked” is the only way to go.. :)

If she was going to disarm him (which I don’t think was necessary) she should have just removed the entire holster, gun and all. This would minimize, if not eliminate, the need to touch the actual firearm. This is basic gun safety.
