id always heard they carried nasty stuff- , or maybe I’m thjinking of armadillos? I’m a northerner so we don’t get either animal really, although opposums are making their way north and every few years there is a bunch of them dead on the roads- but we don’t see them running around

Opossums are generally safe to eat. However, like most wild game, these creatures can carry several germs and diseases. Some may possess a bacteria that causes tularaemia, an illness with symptoms similar to the flu. They can also harbor the bacteria that causes tuberculosis.
To avoid foodborne illness caused by opossums, soak the meat in a salt-and-vinegar brine for at least 24 hours. This will help kill any bacteria that may be present. Thanks, I’ll do that next time I accidently hit a speed bump lol- I’ve never tried woodchuck or racoon, but I guess those are, or were staples on the menu not so long ago too. I’ve eaten tree rats before, but wasn’t crazy agout the flavor- prba ly woulda been much better had it brined for awhile. I tried it fried, which made it way too tough, and pressure cooked, which was much better, but still the flavor wasn’t all that great. Likely woulda been much better in a stew.
I think I’d turned into a vegetarian before eating a rat, groundhog, or a raccoon.
Heads up: There’s a roadkill raccoon on the road next our property. Still fresh if you can get there in time. 🤣🤣🤣
Lol, I’ll be right over. Used to watch the show swamp loggers I thunk it was, znd there were 2 brothers, mitch and his brother, can’t remember name, he died during the show- anyway, mitch was walking to town one day for groceries or something, and he came across a dead crow. Long story short, he brought it home and supposedly cooked it up (though I think it was all staged, adn not crow that he cooked), and ate it, “allegedly” lol.
