Stuffed Mini Pumpkins
A must for your Thanksgiving table.
Ingredients for 4 servings 4 mini munchkin pumpkins 8 Plum tomatoes 2 Tbsps chopped parsley
1 Tbsp thyme salt 1 tsp Chili powder 2 garlic cloves 2 Tbsps olive oil 4 scallions Mozzarella cubes
Prep Rinse pumpkins, cut off tops, scoop out insides. Cube tomatoes.
Stuffing Heat oil; saute garlic, fine-chp scallions and tomatoes over med a min. Season with salt, chili powder, parsley and thyme. Assemble: Spoon filling into pumpkins, scatter mozzarella cubes over. Broil 1 minute til mozzarella is golden. Serve warm as a small appetizer or side.
Those mini pumpkins are so CUTE! Would also be nice filled with a traditional stuffing.
