Butterscotch is pretty close to caramel except you use brown sugar and don’t cook it as much.
You start with brown-butter, scorched or “scotched”, before adding the sugar component.

Yeah, but scutterbotch is better. Used to like Dairy Queen butterscotch sundaes but they changed to caramel and it isn’t nearly as good. Osses me piff.
