I should do that, but some of the medical websites I need, only accept Chrome, and won’t function correctly with my Opera, Pale Moon or Brave browsers. They ‘specify’ Chrome.

Normally, sites like that want the latest version of either Chrome or Firefox so Firefox might be an option. If nothing else, you can use Chrome only on those sites that require it and use alternatives for everything else.

Also, go through all of Chrome's settings and turn off anything that looks like it would collect data. All those things that "improve your experience"
