Some expert chefs say .......a soupcon of Pernod, an anise flavored spirit .......
is the secret ingredient that provides Oysters Rockefeller memorable flavor.

Although the actual recipe, and number and types of “greens” used, has never been divulged.

Are the oysters raw? Hepatitis warning...

I remember in Coast Guard cook school that we learned it was illegal to serve raw oysters in a coast guard dining facility and I think that held true for all military dining facilities.

The reason? Hepatitis.

That said, I remember doing some work later on in New Orleans on a per diem budget for a contractor and the deal was go back to the hotel where there was a restaurant in the parking lot of the hotel, and at the time they had a dozen oysters on the half shell for a buck. So... guess where we ate dinner every night for a week? That’s right... couple dozen oysters and a V8 juice was my go-to supper that week.

Lunch was wherever we happen to be at whatever Mom and Pop Louisiana style Diner we happened to stop by and we ate real good down there.

Raw oysters yum! Try with soy sauce and hot sauce. Real horse radish. But I’m not fussy. The cooked, then chilled mussels at our local ChiCom buffet are just as good. Soy sauce is a must!
I ate there yesterday.
