Although the actual recipe, and number and types of “greens” used, has never been divulged.
Used to like Alton Brown but not after a channel he had during the lockdowns. Whew, woke of the woke of the woke.
Are the oysters raw? Hepatitis warning...
I remember in Coast Guard cook school that we learned it was illegal to serve raw oysters in a coast guard dining facility and I think that held true for all military dining facilities.
The reason? Hepatitis.
That said, I remember doing some work later on in New Orleans on a per diem budget for a contractor and the deal was go back to the hotel where there was a restaurant in the parking lot of the hotel, and at the time they had a dozen oysters on the half shell for a buck. So... guess where we ate dinner every night for a week? That’s right... couple dozen oysters and a V8 juice was my go-to supper that week.
Lunch was wherever we happen to be at whatever Mom and Pop Louisiana style Diner we happened to stop by and we ate real good down there.
I won’t eat raw oysters under any condition..............
Oysters Rockefeller is cooked...........
Oyster Stew
This easy oyster stew can be made last minute using canned
oysters; tastes just as elegant as if you used fresh oysters.
Ing--6 tbl butter 2 tbl flour 1 cup fine-diced onions ½ cup fine-diced celery 2 cups milk 2 cans oysters, (reserve liquid) 1 tbl pressed garlic ¼ cup fine-chp parsley S/p, cayenne to taste
Make--whisk 4 tbl melted butter, flour, stir constantly, then cook 3-4 min. Add onions and celery, cook 2 min. Stir in milk, reserved oyster liquid. S/p, add cayenne. Bring to simmer; cook 4 min. Add canned oysters, garlic and parsley. Bring back to a simmer; cook 4 min (oysters curl). Stir in 2 tbl butter. Set offheat. Serve w/ oyster crackers.

You can also add h/cream for extra richness.
Actually the measurement is 6 tbl butter total.......
divided into two uses of 4 tbl and 2 tbl as you make the recipe.
I can eat oysters and clams but mussels make me sick.
Raw oysters yum! Try with soy sauce and hot sauce. Real horse radish. But I’m not fussy. The cooked, then chilled mussels at our local ChiCom buffet are just as good. Soy sauce is a must!
