I left sardines consumption and moved to canned mackerel. I drain it, remove. Bigger bones, drizzle olive oil on it, smoke it for an hour in my cold smoker using Applewood. I left the canned sardines due to inflated cost.

By the way, nothing better than large fresh sardines and mackerel when you come across them. Don't pay the marked price. Half it and offer to buy a larger lot. I've gotten fresh large sardines for as little as $1 per pound. Be smart.
