I was stationed at RAF Alconbury ‘73-75. Made many trips to Stilton and sampled lots cheeses. A bottle of cheap Spanish Rosa paired perfectly, along with some fresh warm bread. Ahhh….🧀🍷🥖

The genuine English Stilton - ie cheese made using the traditional methods by six cheesemakers,including Colston Bassett, Cropwell Bishop, Long Clawson etc - has changed significantly in recent years, and not for the better.It always used to be made using raw (ie unpasteurised) milk. Some years ago there was a collective agreement by the producers to switch to pasteurised milk, and the cheese lost a lot of its special qualities.
Now, however, a new variety has emerged reverting to the traditional unpasteursied milk methods, using the original bacillus culture. For trademark reasons, it can't be sold as 'Stilton', so it's called Stichelton. Very good it is, too - back to the 'true' Stilton flavour.

Thanks for posting this. I hadn’t heard of Stilton Cheese before. My wife wanted some specialty food from Whole Foods so we stopped there today. (I wore my Trump hat (and CCW))
They had some Stilton Cheese and I bought some. It’s incredible.
