My two favorites- apple, and my daughter’s pecan pie. Pumpkin is a close third.

When ready, pie will have a slight surface wobble w/ a slightly rough coconut textured crust on top, smooth and creamy baked egg and coconut custard filling, and a puff pastry-like crust at the bottom.

Ing 4 eggs ¼ cup butter, melted 1 cup sugar ½ cup flour ¼ tsp salt ½ tsp b/powder 2 cups milk 1 cup or more flaked coconut 1 tsp vanilla

Instructions Beat all ing til combined, or blender mix. Bake greased 9 -10 inch pie dish 350 deg for 1 hour (center is firm and pie is golden).

Will have a slight wobble to the surface. That will set as it is cooling. Allow to cool and completely chill overnight. Serve with your favorite ice cream, or whipt cream, sprinkled with toasted coconut.
