Those would NEVER last long enough in my house to worry about going stale.
According to googel: “Basically, chocolate is a great candidate for short-term storage of fewer than 5 years if you store it in a cool, dry environment in an airtight container. Repackaging in Mylar or glass jars with an oxygen absorber or vacuum sealing is considered safe due to the low moisture nature of chocolate.”
As far as potatoes I buy the Idahoan Baby reds in the packets. They cook up just like mashed potatoes. There are other ones like garlic mashed, cheese etc;

I swear I looked for that information for years. I looked on prepper sites, which apparently was a mistake.
remember....freeze dry goods for several days before you put them in storage..
