I really, really like potatoes!
One of the foods I majorly miss in my low carb lifestyle is potatoes (the other ‘biggy’ is Sourdough bread). Occasionally, I do have potatoes as a treat. In my herb book, the chapter on parsley, there is a recipe that will be my next potatoes ‘treat’ meal:
Parsley Potatoes
2 lbs potatoes, sliced 1/4” thick
1/3 cup duck fat (or lard or butter), melted
Salt & pepper to taste
2 cups finely minced shiitake mushrooms
4 garlic cloves, minced
1 small bunch of parsley, minced
Preheat the oven to 400°
Combine the potatoes in a large roasting pan with the melted duck fat. Add the salt & pepper to taste.
Place the pan in the oven, and bake for 30 minutes, turning the potatoes half way through.
When the potatoes are tender, add the shiitake mushrooms and garlic, then cook another 5 minutes.
Remove the pan from the oven and stir in the parsley. Serve immediately.

Mashed potatoes, with a can of cream-of-chicken soup for gravy, is my favorite comfort food. If you can’t boil a potato for mashing, bake one in the microwave and smoosh it with a fork. Add milk, butter, and salt, then smoosh it some more. Single-serving mashed potatoes, in less time than it would take to boil water!
Is it time to plant potatoes?
Things are growing as well as can be, considering the higher than normal temperatures. Tomato plants now loaded with blossoms because the temperatures now dropped to a level more suitable for blossom development. Green beans are producing prolifically. I have been eating them straight from the plant because they taste so good. Already planning next year’s garden. Maybe I’ll try potatoes.
