Couple of things:

- Organic Extra Virgin Olive Oil 16.9 FL oz was $5.29 at Aldi’s (yay!!) The recipe I am using calls for 4 cups, but since the ingredients are rosemary sprigs & olive oil, I will just reduce the number of sprigs.

- this is the recipe I am using:

It is “immediate”, no wait for days or weeks for the rosemary to infuse. Also, I have to get my big food processor out anyway to make slaw so I can do this recipe without a lot of extra effort.

- we have an ‘Olive Oil Taproom’ within a reasonable driving distance. A friend has been giving me bottles of infused oil (Ginger & Black Garlic; Harissa) & that’s how I found out about them. They have all sorts of infused Olive oils & vinegars, rosemary being one of them. This got the wheels turning for Christmas present ideas!

They also have an elderberry infused balsamic vinegar (currently out of stock). My niece has elderberries on her place, just harvested a bunch - I will have to see if she has any frozen I can buy from her. Balsamic vinegar is a favorite of mine. - I currently have enough red jalapenos for 4 batches of jalapeƱo pepper jelly! If I can scrounge enough jars, I might go for 5 batches - looks like I will have the peppers for 5. That means the rest of the peppers can be used for poppers - woo hoo! You can fill the peppers with the cheese mixture & freeze - the bacon is wrapped after they come out of the freezer & you can then bake or grill. Poppers in the dead of winter sounds great to me! My jalapeƱos are the biggest ever this year so they make great poppers :-)

I LOVE making that Balsamic Reduction for putting on - just about ANYTHING (or just eating it with a spoon, LOL!) It’s great on fresh garden tomatoes.

Something else that’s REALLY expensive to buy, but cheap to make yourself.

Made a Peach Pie this morning and canned some V-8 juice. Waiting for the grass to dry so I can mow; we got 1/2” of rain last night in about 15 minutes! Lots of wind, but no damage other than some branches down and leaves PLASTERED to everything. More rain Sunday night.

This season is evening out beautifully, weather-wise. So thankful!

New puppies are doing great. Dolly (retired Beagle) and Arikara (Plott Hound) are out hunting our woods; I can hear them from the porch. Sioux (much younger Plott) has has had Second Breakfast and is a sleep in her kennel.
