Grab a slice on July 12th and celebrate National Pecan Pie Day! Mix up the ingredients using primarily corn syrup, pecan nuts, salt, and vanilla. Occasionally, recipes vary by including sugar syrup and molasses or maple syrup. Other additions include chocolate and bourbon whiskey in some regions of the country. Top it all off with vanilla ice cream or whipped cream.

Pecan pie is considered a specialty of Southern U.S. cuisine.
Many attempts to trace the origins of the pecan pie have not been successful. The earliest dated recipes come from 1897. However, claims of the pie being made in the early 1800s in Louisiana exist. One of the earliest recipes for a pecan pie appeared in the Lady’s Home Journal in 1897. The recipe for the “Texas Pecan Pie” was later reprinted in several newspapers across the country. It included six ingredients – sugar, sweet milk, pecan kernels, eggs, and flour. The recipe is basically directions for a custard base, unlike the pecan pies we know today.
Well-known cookbooks such as Fannie Farmer and The Joy of Cooking did not include this dessert until 1940. By then, Karo syrup found its way to the pantry shelves. Of course, the makers of the sweet syrup increased the popularity of pecan pie. Their company claimed the pie was a “discovery” in the 1930s by a corporate sales executive’s wife as a “new use for corn syrup.”

I will have to tell you that after moving to Inner Banks area of North Carolina I am seriously pie deprived. I had a fair (only fair) Pecan Pie but have had few others even acceptable since arriving here a year and a half ago. Fruit pie. blah with poor crust. Lemon meringue non existent. Pumpkin is even rare. My lovely new resident state is seriously short of bakers or stores selling acceptable pie.

Missed Pecan Pie Day, again.
I must be nuts...
For pecan pie lovers, here’s another way to use pecan you may not have heard of.
A few years ago, we went to the Smoky Mountains area, and on that trip there were 2 bags of pecan wood charcoal. We grilled some steak and burgers with that charcoal on the trip, and I’m telling you, it was the BEST! Unfortunately, Kingsford stopped producing that variety, at least that we’ve been able to find, but now my husband uses Weber Pecan wood chips with his other charcoal to get that wonderfully mild but smoky pecan flavor. So, not pecan pie, but pecan wood will be used for our dinner tonight.
Here’s what’s in the works. I’m marinating a flat iron steak in Vidalia onion and sweet pepper vinaigrette. Later as we get closer we will remove the marinade, and rub it with Brazilian churrasco style seasoning, then he will smoke it for us to enjoy. It’s so very tasty, full of flavor.
I usually sauté bell peppers and onions for a side, and cook either refried pinto beans or some sort of pintos as another side. Add a little cilantro to bring out more flavor. Yum, I can’t wait for dinner tonight.

Pecan Pie Bars
Perfect for holiday gatherings or any occasion where you want to impress your guests with a delicious and indulgent dessert.
Bars Ingredients CRUST 1 3/4 cups all-purpose flour 3/4 cup Land O Lakes® Butter, softened 1/3 cup granulated sugar 1/4 teaspoon salt 1/3 cup finely chopped pecans
FILLING 2/3 cup firmly packed brown sugar 1/3 cup all-purpose flour 1 teaspoon salt 1 1/2 cups dark corn syrup 4 large Land O Lakes® Eggs 2 teaspoons vanilla extract 1 1/2 cups coarsely chopped pecans
STEP 1 Heat oven to 350°F. STEP 2 Combine 1 3/4 cups flour, butter, granulated sugar and 1/4 teaspoon salt in bowl. Beat at medium speed, scraping bowl often, until mixture resembles coarse crumbs. Stir in 1/3 cup pecans. STEP 3 Press crust mixture evenly onto bottom of ungreased 13x9-inch baking pan. Bake 18-22 minutes or until edges are very light golden brown.
STEP 4 Meanwhile, combine brown sugar, 1/3 cup flour and salt in large bowl; whisk until mixed. Add corn syrup, eggs and vanilla; mix well. Stir in 1 1/2 cups chopped pecans. Spread evenly over hot, partially baked crust. STEP 5 Bake 33-38 minutes or until filling is set, top is deep golden brown and edges are very deep golden brown. Cool completely. Refrigerate 30 minutes. Cut into bars. Store covered and refrigerated.
