The sweet smell of green chile roasting on an open flame permeates New Mexico every fall, wafting from roadside stands and grocery store parking lots and inducing mouth-watering visions of culinary wonders.
Now one state lawmaker says it’s time for everyone to wake up and smell the chile.
Sen. Bill Soules’ visit with fifth grade students in his southern district sparked a conversation about the savory hot peppers and the potential for New Mexico to become the first state in the nation to proudly have an official state aroma, a proposal now being considered by lawmakers.
“It’s very unique to our state,” the Las Cruces Democrat said of roasting chile. “I have tried to think of any other state that has a smell or aroma that is that distinctive statewide, and I can’t think of any.”
For New Mexico, chile is more than a key ingredient for every meal. It’s life. It’s at the center of the official state question — “Red or green?” — and is one of the state’s official vegetables. …

Blue state like NM should go with “vapid nothing” as the aroma.
Smells better than Washington. (not hard)
Blue state, right?
Probably “ass” should be their official aroma.
Virginia should name second hand smoke as their State aroma, and protect it in restaurants.
Used to be you could go to Bayonne to find out.
I’d have gone with “UFO exhaust fumes”.
Living in Illinois and having to deal with our current political leadership, I’d say the the Official State Aroma here is 🐂💩.
And it really stinks…
I love the smell of roasted chilis in the morning!
I grew up in that state and I fkg hate it. Yeah...a resentment I need to work on. The city Espanola is right on the Rio Grande mid State. Was called the “Low Rider capitol of the USA” in 1985. Today its called the “Heroin capitol of NM”. Mexican culture is a trip. Hardcore Catholics. Ridiculously superstitious. Believe that Jesus walked at a spot that became the location of a Church in a village called Chimayo. Thousands of “believers” make a pilgrimage to that spot every year to have ALL their sins forgiven. Nutty. But wth do I know. OH...speaking of those fine Catholics...in December 2022: Judge OKs Archdiocese of Santa Fe settlement of $121.5 million agreement that would settle nearly 400 claims made by people who say they were abused by Roman Catholic clergy.
LOL, I was thinking the same thing...
Anything that keeps the legislature from its usual mischief is good. Plus roasting green Chile smells great.
The official state aroma of rural New Mexico is obviously ‘septic leachline’.
I vote for “Stench of Corrupt Democrat.”
I’d like to know what other aromas were in the running. Dusty sweat? Exploding meth trailer?
Best place to visit in New Mexico is Texas.
