Moving out to the boonies in the Ozarks is starting to pay off. If you get a nice deep well drilled, it taps into an aquifer that comes out as hundreds of springs that put out potable water. My neighbor across that road has a huge spring that was certified by the state for bottled water sales. They didn't follow through with the plan due to lime content. Still potable but would have had to get huge reverse osmosis system to avoid white flakes of lime after sitting and also would have to add minerals back in. It's been 20 years but my other neighbor sent a creek water sample in for testing to see if he could use it while he built his house and got a well drilled. Came back as not perfect but potable.

Missouri is one of 29 states that has their own meat processing licensing and inspections. I can drive 20 miles and buy pasture raised beef and other meat that's been raised and processed on the farm . Unlike grass fed beef you might find online for $40/lb, these people's prices are in line with the grocery stores, within $2-3/lb. On the drive there, I go by hundreds of head of cattle. I'm raising meat goats. I have one laying hen and will be getting a half a dozen more for her to raise because she's a survivor and will lay eggs without me feeding her. Plenty of room for a garden and it will be getting bigger this year.
