I have doctor’s order’s to switch to a “paleo/keto” diet starting this week.
He suggested I only eat an egg or two in then morning, an avocado for lunch, and piece of fish or chicken for dinner, on most nights. But no carbs, ever, unless they’re naturally appearing in vegetables.

That seems very calorically restrictive! Surely, there is more food than that you will eat.

If you love bread that is the hardest part of keto. The “keto” breads are not very good.
The best thing for a bread lover on keto are the mission low carb tortillas. Try them with whatever you like - BLT’s, tuna, pulled pork, deli meats, bratwurst, hamburger, low sugar sloppy joes, etc etc.
Without those tortillas it would be a much more difficult diet for me.
Eating out can be challenging but there are salads (watch the dressings or bring your own low carb dressing) and you can get big burgers on lettuce wraps and just eat them with a fork and a knife - the lettuce never holds together! These are pretty good usually.
It’s not a bad diet and I truly feel better when I stick to it but don’t buy the silly hype that you can eat whatever you want. Eat enough to feel satisfied, don’t eat after dinner time, minimize snacks and munching, and give it a shot!
When you first start you might get a keto headache as your body adjusts.

That’s harsh! I lost 25 pounds doing low carb (I didn’t know it was called “keto” until recently). I was always full.
Eggs with cheese and bacon in the morning. No limit on quantity.
Meat (fish, steak, hamburger, poultry) with green veggie(s) later in the day. No limit on quantity. I recently found at Walmart “Keto” hot dog and hamburger buns.
Snacks like walnuts, almonds, peanut butter. No limit on quantity.
Ordering fajitas (Chili’s are the best!) at a restaurant are great. Eat everything — guacamole, salsa, etc. — but the tortillas.
I did miss potatoes (my favorite food), rice, crackers, pasta. Have read, and believe it’s true, that if you cook those things, then refrigerate them for several hours (varied between 12-24 hours), it reduces carbs by about half. Haven’t tried it, but I will. Potato salad, sounds great!
