Home grown yeast has a terroir that is your own. Sin Fran’sdisco has pretty descent wild bread yeast in the air, tho not much more. You have no way of knowing your local yeast ecosystem till you capture some and try it.

00 is good for za crust... there is no doubt to that, but...

Aging a sourdough in the fridge overnight will yield even better crusts. High protein (bread) flour with some food added for the wee beasties. Those things do a lot of work. Flavor depth, gluten development, etc. They are like little flavor and texture bombers.

Not knocking 00. It is a quick crust game changer. I just personally like the low and slow method and results.

Think of 00 as a tool. Try the local sourdough too.

This verse really sums up the reality of life experiences. Folks may tolerate Christians, but deep down they mostly despise them, and are looking for any excuse to tell them so too.

We moved into a Christian college town, and the divide between townspeople and Christians is thick. The townspeople for the most part truly hate the college and anyone associated with it. When folks were getting to know us, they woild inevitably ask “and what do you do for work” and when we told them, it was like their whole countenance would change- they’d get visibly angry, clam up, and leave and that would be the last interaction qhat they would deign to have with us.

Others were a bit more polite, and would feign friendship AS LONG AS we never mentioned anything to do with God. They could run down the college, Christians, the church etc, but as soon as so eone tried to defend themselves agaisnt the fslse accusations, they would really get an earful of angry insults and more false accusations.

Not everyone were like that of course, but many were. You could definately see 2 Tim 3:3 was talking about them. They outright hate good, and weren’t shy about telling hrstians about their hatred either.

I have been trying to make sourdough starter for over a month...and having problems...it really will not “double”, altho the whole wheat one seems to be getting there (I resorted to making 2 different batches)

Thanks for all the info! I will check it out. I make my dough in a bread machine. I leave it in there for 24-48 hours & I think that helps it develop a very yeasty flavor which is delicious.

I had never considered just leaving it in a bread machine to mature. I have to tip my hat to you on the concept and will try it. You make sourdough though not that sour is what it sounds like. The Lactobacillus has not had enough time to become an army of little sour buggers.

Catch some of the wee beasties in a mason jar and put a harness on them. Put them to work on making some baguettes for you and yours.

Also, the discard... do not toss it. Save it in another refrigerated jar till you can make pancakes. Sourdough starter discard pancakes are complete flavor bombs.

Avoid the mold but for all intensive purposes it is just great food. Lactoferment does not make people sick.

Try leaving your jar with just pantyhose and a rubber band around the neck to keep out bugs. Also try rye flour. Rye superboosts the wee beasties. Rye make super active starter that triples or more. Can not explain why but it does.

It needs to breathe. Anything like it will do. Pantyhose is just perfect IMHO as would be a cheese cloth cover. It just needs to breathe freely.

The only drawback to rye is the yeast get used to it and the other beasties so initial pop is a tad slower even though your starter is like the stay puff monster. They need to figure out this new stuff is food but when they do... it proofs big time.

A cheat is to when feeding just mix in some of whatever flour you will be using it for and enough of the beasties will be happy almost immediately.
