I landed in Louisiana in 1983, courtesy of the U.S. Army.Met my cajun husband who hunted and taught me how to cook.
Had my kids there, and the dish was always made on New Years day. Supposedly for good luck, but really a very gassy meal.

Benton Hams are a special treat in our family. Same with bacon, ham hocks, etc from them. We haven’t gone wrong yet. It’s a little salty compared to others, so don’t add any to your recipe. So so good.
Also bought some outrageous chow chow from there a year ago. Loved it so much, had to drive the hour plus while on vacation in June to get more, only to discover it was sold at a Mennonite farmer’s market much closer by. Bought a case this time. You don’t have to tell me twice.
