At least with the tub off most of the big things are a lot easier to do.
Medically I am cleared to do what I want.
Survive Christmas and if I don’t drop near dead again, hit it hard. Mostly pricey hardware.

So-so heater with one outlet on the floor above the transmission hump and a ragtop, with cloth doors on a wire frame and thin clear vinyl windows all around...brrr.

The yutes in East Palo Alto discovered I kept it in my driveway and thought it was a great source of spare parts.I can't even imagine living like that.

And they can-openered the passenger door on my wife’s then new Jetta and destroyed the entire plastic dashboard to get her Blaupunkt AM/FM/Cassette. $2,000 damage (probably $4,000 today or more) to get a stereo they would sell at the flea market for $25 for their next fix.
This was in the nice mid-town area of Palo Alto. We had a major a-hole neighbor we could not stand, so the car crap was the last straw. We left and moved five miles away to a much nicer, much safer, much less crowded place.

Parts won’t be cheap or easy to find for the early models, but they’re around. I hope you make it thru the projects.

I have the majority of small stuff on hand from when it was running and somewhat drivable.
My military style dash should be coming out of powder coating any day.
The big jobs are suspension, transmission, dual chamber brake cylinder, and body.

Not sure why your 13 JGC isn't worth much on resale. Mine, an Overland, is in great shape (many, MANY shop visits over the years), and the dealer continuously sends me offers to buy it back. Not interested as I enjoy not having a car payment. ~96k miles and it's just starting to have issues with burning oil. Good thing I got an extended lifetime warranty with it as it's already come in handy several times.
I almost bought a Toyota 4-Runner when I decided on the Jeep. Wasn't very impressed by the Highlander at the time, but I'm sure they've improved it significantly since 2012-13.

My '13 JGC has 140,000 on it. Nothing wrong with it, it's just that it's the Laredo model, though it has the premium rims, UConnect, leather seating, heated seats and all the stuff the Limited has. I'm the 2nd owner, bought it as a 3yo with 32,000 on it. Paid just over $21k out the door for it so I'm not complaining about the resale value that's left. I've gotten my money's worth out of it.
Mine doesn't burn or leak a single drop oil. I've run full synthetic in it since I bought it.
Personally, I'd love a 4Runner but don't want to spend that kind of cash for a vehicle. The Highlander seems to be a capable vehicle, it'll never leave the pavement (neither did my JGC) I just really liked the ride comfort, handling, amenities and the power of the 3.5L V6 they put in it. In many ways it reminded me of my JGC when it was newer.

Are you trying to restore to original, or with newer, safer and better parts?

Not really, safe to drive, decent cosmetics and hopefully rust free.
I’ve made various small modifications since some original aspects never appealed to me.
FWIW I did a little searching for donor tubs and found a prospect but it’s an M38 tub so no tailgate. I’ll review the photos closer.
If all the boxes check and truck shipping could be done, I would go for it. A tailgate isn’t the most important thing.

“A tailgate isn’t the most important thing.”
Not unless you’re loaded with kids or animals, going for a ride. You could probably find one close, have some metal fab done, and it’d work.
