We're only two weeks into October, but let's be honest, we're already thinking about Thanksgiving. A better Thanksgiving dinner than the traditional “Midwest buffet gorge” style, is to carefully plan ‘courses’ over a longer period of time. “Heavy” courses, such as turkey and gravy, are served individually, and “Light” courses, such as small servings of pickled foods, snacking vegetables like celery and carrot sticks, etc., are served several at once.

Higher carb foods like mashed potatoes, breads, and stuffing come later in the meal.

Serving small amounts of alcohol, such as aperitifs and digestifs, along with small mild wines, throughout dinner, can make the meal much more enjoyable without getting anyone intoxicated.

A superb alternative is Greenberg Smoked Turkey in Tyler, Texas. My family has been ordering these for over 60 years—guess you might call it a tradition :)

Anyway, three years ago they had a fire that destroyed much of their operation but were back in business the following year.

Greenberg started as a mom and pop setup in the 1930s and has been growing bigger ever since. They ship them fresh and that smoked aroma is intoxicating.
