He would probably really freak out if you cooked it according to the new guidelines for pork...internal temp of 145 instead of the old 165, which leaves it a little pink here and there.
I have a close family member who’s a porkophobe and it’s really too bad because a perfect bone-in pork chop is a true delicacy.
Sometimes I get a hankering for pork chops cooked with sauerkraut. I never make it, though.
