Core and seed a batch of large jalapeno peppers, a dozen or so. Next, scramble and cook a package of Jimmy Dean pork sausage, drain and let it cool a bit then mix in enough cream cheese to make a paste and stuff the peppers with it.
Wrap each pepper with a strip of regular bacon and fasten with toothpicks.
Smoke for around two hours at 225-250 degrees. A pepper roasting rack (Amazon $20) works best.
You will not be disappointed.

I am the strange bird, BBQ to me means burgers and dogs, maybe brats, and mac/tator salad. BBQ sauce is something I rinse off. Sorry, I just don’t like the stuff.

Core out a head of cabbage. Brown some ground beef or ground italian sausage or both. Add some ketchup, worchestershire, salt, pepper, garlic and some thyme.

Wrap on alum foil leaving the top open. Throw on the smoker for a few hours or until the inside leaves are soft.

Slice into quarters or eighths.

Your language has been perverted to think burgers and hot dogs are BBQ. In correct English un perverted by the Yankee press snobs, they are grilled not BBQ’d

Or if you want to you can go the Bulgogi route and use soy sauce, rice vinegar, sesame oil, sugar, and garlic.

I had Texas barbecue and understood. What barbecue really is.

Texas barbecue really is as good as it’s cracked up to be.

I’m in N. Illinois, too.
I received a new gas grill as a birthday present and I’m having a lot of fun with it. I know it’s not really BBQing with a gas grill, but it is a joy to use.
I wasn’t able to do any grilling at all last year, but making up for it now.😀

I was there with you most of my life, but when I moved to Alabama, it took on a whole different meaning. I own two smokers now and use them at least once per week. Chicken, pork, beef, cheeses, veggies and fish.

Born and raised in NJ. Went to Raleigh for school...spent the next 35 years in NC. Now back in the old Garden State.

I don’t use gas (propane) at all when I grill; I use hardwood lump charcoal. It burns fast and hot. Great for steaks or burgers or andouille or sausage.

I BBQ for brisket and ribs and chicken. I use a Weber kettle grill for everything I do. Smoking and BBQing on the classic Weber kettle grill is easy, but takes some time. But it is soooo worth it!

The large Weber kettle grills are underrated for smoking. I have learned to use it for smaller cuts when I don’t want to go through the effort and a bag of charcoal to engage the smoker.
