It means he has one un-neutered male dog as security for his farm due to near-by "ne'er do wells". If he has that dog neutered, it will sit on the porch and watch as those bad guys walk out with all his stuff while he is traveling on business. Probably much like his girl-friend and her buddies planned on doing.

My guess is that his dog is a highly trained herd/guard working breed that is intended to be bred with selected females belonging to other farmers in some type of co-op arrangement because they are freaking expensive to purchase.
Or his hobby farm is also guardian home for a breeder who has retained breeding rights to the male dog until he ages out of the breeding program.
