I use minced shrimps, scallops, and whitefish mixed with cream and finely minced onion & garlic sauteed in butter and a little white wine. I stuff the casings using an attachment to my Kitchen Aid mixer and then chill overnight.
The Boudin are poached in water and white wine and served over rice with a little Alfredo sauce.
