Trucks can be run without DEF. In fact, DEF deletes on late model pickups are very common.

DEF has a born on date on the box. It is best to use the freshest product you can find. Contaminated DEF can damage the DEF injector, which will put truck in limp mode.
All kinds of things happen. Truck only goes 5 mph, and if engine is shut down will not restart.
We have one truck that uses Def. The others all have the 5.9 Cummins. No def, very little emission equipment.
Gues which ones get the best fuel mileage.
