Ground round or ground sirloin ... I prefer the ground round since it is much less fat. I make meatloaves using ONLY ground round for the beef.

Ground Round actually has MORE fat (20% on avg, though 15% in some cases) compared to Ground Sirloin (10% or less on average).

The muscle that makes a round steak or roast is poorly flavored, almost flavorless. OK for marinating and converting into jerky, though.
