Actually, it would be culturally accurate to keep it cheap. It’s the same reason Chinese food is cheap while Thai food is expensive. Mexican and Chinese food was introduced to this country from poor immigrants.

All the “latinx” people nodded their heads while she was berating them, but you can be certain they’ll still go to their local taqueria for better food at cheaper prices, and let the gringos pay the “white people tax” at the “gourmet” Mexican restaurants.

I have had Mexican food that was fresh, from good ingredients, and well-seasoned which would be worthy of a high-end restaurant and its prices.

And I have had Taco Bell.

Two different things: we will always have the low-end, but I agree that Mexican food well-made is worthy of being high-end. It is not all greasy-spoon; it can be done well.

Well, carne asada is skirt steak. Pork tacos are usually called carnitas or al pastor.

Carne asada tacos typically can be very cheap since they use one of the cheapest cuts of beef, because it is very tough. They just honed their cooking methods to tenderize the meat. That and the taquerias buy a lot of volume, so they get an even bigger discount. Of course that is out the window with food inflation kicking in.

It took them 16 hours, start to finish, to make tortillas, because they let the dough rest in the fridge overnight.

Yep, the woman doesn’t get it. People pay $19 for three tacos so they won’t have to eat with Mexicans.

I spent a week in Paris and I thought the French restaurant food was sub-par compared to what is available in the US. Even the pastries were mediocre. The best food I had during the entire trip was a small Thai restaurant. I wasn't eating in dives either.

I will say I’ve eaten her restaurant here in Los Angeles and it’s outstanding. The red mole was my favorite. I did pass on tge crickets. I’ve recommended it a lot.

Her mole negro was very good as well as tge green mole. I’ll pass on the yellow mole.

Her prices aren’t through the roof but its not the neighborhood taco restaurant either.

If you’re in LA give it a try

Refried beans? If they weren’t any good the first time, why would you waste more time and energy on them? Flush them down the toilet like the stuff they so strongly resemble in color and texture.

Some people simply can’t afford it. I’ve been there. There was a time when I thanked God for 99 cent seven layers at Taco Bell. I would take my two kids to Taco Bell and have a meal for all of us for $5. I’d eat two, my son would eat two and my daughter, who was younger, would eat one. And we’d be satisfied.

Or maybe the majority of Mexicans simply realize that Mexican food is mostly cheap - why pay double or triple what a meal is actually worth? Quality is mostly irrelevant here: the best, highest quality rice, beans, corn, skirt steak, and jalapenos are going to have way cheaper costs than a half-decent prime rib or T-Bone with fancy brussel sprouts and asparagus or most other veggies. The only really expensive thing in Mexican food is avocados.

Prep is relatively cheap too - Mexican food doesn;t need any special contraptions or fancy cooking equipment to make, and the methods for most stuff are pretty basic. You don't need a fancy, overpriced sous chef to make a mole or a tortilla, it's something anyone can make in their own kitchen without much effort, unlike most baked items or special recipes.

Lots of competition from the taco trucks.

With all of the construction happening in our area, we see lots of them. Always a line, at each one.

One of the smart ones now parks just outside of the local high school, at the end of the school day. Long line, there, too.
