In the 1980s, someone tried to open up a diner in downtown Meriden, CT, the former silversmithing capital of the world fallen on post-industrial hard times. The restaurant had the standard burgers and lunch time grub, but the owner of "Fatboys" inexplicably made it a Washington Redskins-themed restaurant. You can get away with that here in Phoenix, a very large city with transplants from all over, but Meriden is the home of New York Football Giants, Red Sox, Yankees fans (Patriots had no following until much later).
The owner may have had the best lunch in the city, but no one would ever know it with such a self-limiting niche.
