The best by date is generally one year according to the books.
But... as long as you pressure canned and the seal is still good and there is nothing growing in it I have eaten stuff that is five years old without problem.
Any older and I would probably feed it to the pig.
Recycling at it's finest. :)

There have been canned goods found in the wrecks of old steamboats that traveled the rivers of the US 100+ years ago. The food inside was still good.
If the seal is intact, and the food looks and smells ok when you open it, then it should still be good. Heat it up thoroughly before eating, just to be sure.
