Ugh....last time I canned chicken....it turned into a big mess.

Beef is much easier, imo.

Wouldn’t the pressure and time amounts depend on altitudes? Or, it’s the same, regarding location?

That is why I do not can chicken.

But I can beef, pork, venison and occasionally, fish.

And the answer is PJ lives at sea level.

You would have to live pretty high to need to change the numbers. It is all a bit more then needed but I prefer to over rather then under do.
