I am not rushing out to get one either....
I make Italian beef sandwiches. I expect the in a slow cooker method to be somewhere between the butt hole sandwiches and real Italian beef.
Making them real is pretty fun.

Was thinking the same thing. Mississippi Pot Roast is one of my favorites.
Collards go with pork belly IMHO. A side with roasted pork belly wrapped in thyme.... smoked... pressed... sliced nice... and some form of potato with dairy.... but what do I know.

Me too. Four ingredients: chuck roast, beef broth, jar 505 Hatch green chili, jar of your favorite red salsa, cook until you can shred with a fork.
Can make with chicken too. If in a hurry, cook the meat first in pressure cooker.
Killer good.

You take a beef roast.
You stab in with a knife about 60 time with a knife. In each stab you shove a piece of garlic. Coat the roast with fennel and oregano and put and about an inch of water in the pan.
Roast is to rare.
Later take the pan dripping and bouillon to make an au jus to your taste.
Stick the roast in the freezer til you can thin slice on an electric slicer.
Add it to the beef au jus.
Heaven.
Chicago style or Philly style.... Just wonderful.

This recipe is in the crock pot now. Couldn’t find any Giardiniera at the store so I substituted cherry pepper slices and celery.
Needs a few hours more. I’ll let you know how it turns out.
merzettas is usually in the pickle isle but brined cherry peppers will work. throw the celery in the brine too.
OK, finished the first sammie. Put it open faced in the oven and broiled for a few min. with provolone.
It’s OK. Don’t think I will make it again. Italian pot roast sandwich would be a proper name for it.
