Walk into your grocery store's produce aisle or stroll through the local farmers market and you'll likely see a plethora of onion options—there are actually 21 different types! Onions are a vegetable species within the genus allium, along with similar aromatic bulbs like garlic, leeks, chives, and shallots. (While these other well-known veggies aren't onions themselves, they are in the same vegetable family and yield many health benefits, too.) Whole onions should last in your pantry or other cool, dry, dark place (not the fridge) for about two weeks—but don't store them next to potatoes, which emit gas and moisture that can quickly spoil onions. If you have leftover onion that's already been cut, pop it in a resealable bag in the fridge to stay fresh for about a week (you can also store it in a container in the freezer)

Here's one of my favorite pasta sauces:
Genovese SauceOnion to carrot celery ratio: 1 kg (2.2 lbs) onion : 1 carrot & 1 celery stalk. It's a great winter dish that fills the house with wonderful aromas as it cooks all afternoon.

2 things:
I saw recently, that if you put a wet wadded up paper towel next to the onion while chopping it, it staves off the eye-watering effect. Does anyone know if this is true?
I used to have (might still have?) and ONION BAKER. Kind of a terra cotta tray with a rounded lid. Does anyone have or use something like this? Or do baked whole onions?
I love huge onion chunks in pot roast; I usually cut them into 1/4 or 1/6 sections.

I wish we had Whataburger yet, here in York, PA.
I oven roast Onions and peeled Garlic, by the pounds, keep them in a Glad container (they last 2-3 weeks in Olive Oil) in the ‘fridge, and use them on a lot of foods.

Reminds me of an old joke. Doctor is doing a vasectomy and slips, damaging one of the testicles beyond repair.
Thinking the patient won't notice, he replaces it with a small onion bulb and sends the patient home.
Patient shows up a month or so later to complain. Every time I have intercourse, my wife get teary eyed. Every time I urinate, so do I. And if that wasn't bad enough, every time I drive past a hamburger joint, I get an erection.

Just keep your mouth closed, tight, when chopping them. Breathe ONLY with your nose. Your eyes will not water at all. Wash your hands before you open your mouth, too.

In my 3500 sq ft garden I plant 200 onions each year. After harvest I store them like this

They will last six months like this. I plant them on Veterans Day each year and harvest in early May. Been doing this for many years.
