When “I” go in and order, I ask tell them what to put on it. They will, and it really does make my wife angry. She likes them loaded.
Good pizza places will do that if you tell them.
Just tell them you want a traditional pizza and tell them what you want on it.

In New Haven, if you order a traditional apizza in Sally’s and some others, you get crust, sauce, a sprinkling of parmesan. Mozzerella is an option, though a common one. But plain crust and plain fresh sauce can still make a delicious apizza.
You still haven’t told me what your “go to” pizza joints are in Phoenix. Streets of New York is a fraud. Uncle Tony’s is marginal. MOD and Fired Pie are chain-style fast “gourmet”. I’m still working Phoenix out, and I live with three people who can’t have dairy, so testing is sporadic.
