Our family owned a traditional bakery and every year we used to make several Croquembouche for customers on request….. Not really difficult to make but properly applying the spun sugar was painful at times…..Melted sugar burns are the worst…..
Better keep Chris Christie away from it.

Easy cheat: Buy those cute little round frozen cream puffs at Sam’s or Costco. You still have to construct it with the caramel and make the pretty spun sugar swirls all over.
The ones I saw as a girl years ago in the French patisseries for weddings were sprinkled with edible rose petals. Very sweet and pretty, but you would have to make sure they were pesticide free. Sometimes they were also drizzled with dark chocolate. Mmm!
Mom once made a platter of stacked Devil Dogs as a birthday cake for me. DDs at the time were my favorite snack.
She normally made me a devil’s food birthday cake with cream cheese icing, again a favorite, but I thought that the DDs were pretty cool.
